BILLINGS — MontanaFair also continues on the MetraPark grounds this weekend.

With fewer people expected to attend, some out of town food vendors chose not to come, which has opened an opportunity for some creativity.

MetraPark food services came up with Smore fries made with marshmallows, chocolate sauce, gram cracker crumbs and powdered sugar.

The fries are not potatoes, but made with a batter similar to a funnel cake.

The idea was to come up with some other types of "fair food" or "carnival food" because some favorites are missing this year.

Cleanliness is already part of the Pavilion counter and COVID-19 protocols have added a little more work.

"Everybody wears masks and gloves," said Steve Klem, MetraPark Food Services Coordinator. "We sanitize everything after every transaction. So we are extremely safe with everything. We ask our employees to not come in if they're feeling any of the symptoms at all or if they're in contact with anybody that have had the symptoms. We just don't want anything contributing to the pandemic, so we're very careful for the public safety with that matter."

Klem says Metra also added cheese curds since the normal vendor is not in Billings this year.
